Avocado Chicken Salad Recipe by Nature's Parlour

Ingredients
1 Hour X 2 1215 Cals
2-3 pcs finely chopped cooked chicken
1 pc ripe avocado, seeded and peeled
1 pc yellow bell pepper, seeded and finely chopped
2-3 pcs cherry tomatoes, cut half
2 sticks finely chopped celery
1/2 pc finely chopped red onion
2 tbsp finely chopped parsley
2 tsp lemon juice
1/2 tsp sea salt
  Pinch of freshly ground black pepper
Method

    1. Place the chicken, avocado, bell pepper, celery, and red onion in a medium bowl. Gently mash the avocado with a fork and stir it around so that everything gets well mixed.

    2. Add the parsley, lemon juice, sea salt, and pepper. (Add more lime juice or salt to taste). If the mixture seems a little dry, you can stir in a teaspoon or two of extra virgin olive oil.

    3. Serve on sandwich bread or salad greens
