Characterized by Pedro Ximenez intense dark mahogany color accentuates its body and density. The grapes are typically left to dry in the sun after harvest, which concentrates their sugars, giving flavors. Its sharp aroma is reminiscent of sun-dried grapes, toasted coffee or liquorice. Its most defining features are its sweetness on the palate and its smooth and only flavour.
Sherry vinegar will deepen the flavor of whatever it touches while adding both enough acidity and sweetness for a fine balance. It also adds a welcome fresh, bright kick to hearty stews and dishes larded by bacon fat, for example:
• Slide it into a cold soup (e.g. Gazpacho)
• Glaze meats on the grilled meat/ fish/ game
• Use it to Japanese-style tsukune meatballs as it also works beautifully with soy sauce and ginger
• Salad Dressing (e.g. Vinaigrette)
