Stir Fry Spanish Iberian Pork Cheek with Bitter Melon by Nature's Parlour

Ingredients
15 Minutes X 2 TBC Cals
1 pc Iberian Pork Cheek 
1 pc Bitter Melon
  Minced Garlic
  Black Bean Garlic Sauce

Seasonings:
1 tbsp Soy Sauce
1 tsp Corn Flour
1 tsp Oil

Seasonings:
1 tbsp Soy Sauce
1 tsp Corn Flour
2 tbsp Water
Method



    1. To prepare iberian pork cheek, cut into thin slices.
    2. In a bowl, mash the pork slices with soy sauce, corn flour and oil for 15 minutes.
    3. To prepare the bitter melon, cut in half lengthwise, remove the seeds using a small metal spoon and cut on the diagonal into thin slices.
    4. Add the bitter melon. Stir-fry for about 2 minutes.
    5. Stir in the sugar. Cover and simmer for 2 minutes. Until the bitter melon is beginning to soften. Remove the bitter melon from the pan.
    6. In a separate small bowl, dissolve the cornstarch, soy sauce and water.
    7. Add the pork. Stir until the pork is nearly cooked. Remove the pork from the pan.
    8. Heat 1 to 2 teaspoons oil in the wok, as needed. When the oil is hot, add the black bean garlic sauce, minced garlic stir-fry for a minute.
    9. Add the pork and bitter melon back into the pan, pour in the cornstarch mixture. stirring to mix everything together, stirring to thicken..
    10. Serve hot and enjoy!
